How much fat is needed in a diet to still be able to absorb vitamins effectively?
I am on a diet, and I am concerned that I am not getting enough fat to absorb my vitamins effectively. I eat slow release carbohydrates and lots of vegetables to feel full. However, my fat intake is suffering as a result. I eat about 15 grams of fat a day; 135 calories worth. I am on a 1500 calorie diet. Thank you.

Maybe two tablespoons of olive oil would be enough. That would be around 180 calories, enough to dress a salad. If you eat fatty fish, you get fat in that, like salmon. I wouldn’t be concerned, especially if you are trying to lose. You could even take a few Omega 3 fish oil capsules and get oil, or take a tablespoon of mineral oil at night. I haven’t had a problem getting enough oil, maybe, with the reverse. I reread your post, and you are mostly vegetarian, so maybe, incorporate fatty fish, and then, you will feel better.
